Ingredients:
- 2 cups of rocca (rocket)
- 1/4 cup cucumber, sliced
- 1/4 cup roasted sweet potato cubes (or any roasted vegetable you prefer)
- 1/4 cup Frinton Farm roasted salted pumpkin seeds
- 1/4 cup avocado, diced
- 2 tablespoons Frinton Farm pumpkin seed oil
- 1 tablespoon lemon juice
- 1 teaspoon honey (or maple syrup for a vegan option)
